Sauvignon Blanc Saison
We added 100+ gallons of sauvignon blanc juice and added it to one of our fermenters, and knocked out a beautiful multi-grain saison wort on top of it. We pitched our house clean saison blend and let a quick, warm fermentation take place before transferring the beer to one of our American Oak foeders where it matured for several months. We then responsibly dry hopped with two of our favorite southern hemisphere hops; Nelson and Rakau. To finish the beer off we added a bit of fresh champagne yeast for a final fermentation.
This beer is bone dry, and incredibly refreshing. We're tasting peppery lemongrass, subtly tart grapefruit juice, a particularly dank pear-juice mimosa, and a bucket full of freshly crushed gooseberries.
