Thanks to Joe for another great beer.
Shimmering, clear golden body. One finger soapy white head that sticks around and finally settled to a nice cap with spotty, sticky lace.
A lovely, delicate aroma of grains, nearly ripe pears, floral hops with a wart of biscuit rounding things out.
Delicate malts in the taste, cracker crispness, biscuity roundness. The hop profile is delicate, complex and balanced. Anjou pears, grapefruit, very floral and with a nip of green, spicy hop in the finish.
The mouth feel is ridiculous.

Pours a brilliant straw in color, topped with an off white head. Great lacing!
Astringent hop profile... resinous, citrus notes (lemon rind). Very clean and not so sweet in the malt category.
On the first sip, yeah, this one is a bit aggressive for a Pils! Bready and lightly sweet at crucial points during the mid-palate, but this one seems like an exercise in showcasing the hop for which the beer is named. Notes of grapefruit and even dry white wine comes to mind. Exceptional!
A very easy drinking beer, albeit assertive for the tastes of many who prefer less bite to their Pils. I liken the effect here favorably to Jever Pils (although I know that one has a higher IBU and utilizes a totally different and unique hopping regimen).
Worth seeking out a fresh bottle if you love Pils, and probably worth a road trip for a fresh keg to add to the kegerator. ;)

Another humble thank you to Joe. Thanks man!
Perfection. The shining 24k golden body shimmers. The clarity is unbelievable as I can trace the stamps of fingerprints with my eyes through the glass. Tiny bubbles shoot upwards in rows of single file lines to support a whipped egg white head above. It stubbornly descends while leaving Swiss cheese lacing along the journey. (5.0)
Lightly baked biscuits with a drop of honey lay the foundation for an incredible aroma. Freshly cut grass, still damp from morning dew cuts through softly, and a ripened green grape skin gives an earthy yet sweet compliment. (4.5)
In one word, the flavor is rustic. Green apples marinated in white wine, with a spicy, woody, earthy hop finish. The sweet bready base comes through in the middle with that same drizzle of honey as if masterfully intended to play the supporting role of the agrarian hops lead. The pear, as mentioned, finally plays its part as the temperature rises. (4.5)
This has everything you'd want in a Bohemian Pilsner and more. Sweet, spicy, tart, bitter. Soft, luxurious, crisp, clean, dry. It's terrifying how quickly this is disappearing, but its undeniable drinkability doesn't make this surprising. (4.75)
Proof that patience, knowledge, and quality ingredients are always a winning recipe. This is one of the best Pilsners I've been lucky enough to come across. Cheers!

Mistral looks like a pilsner should look. A bright, polished golden body glows 24kt with remarkable clarity. You could read the daily racing forms through the body if so inclined. Rather large carbonation bubbles rush singularly to the surface form all points on the base to bolster the foam. The head is of the purest white and a finger in height on the pour. It's tight, with respectable staying power, eventually settling to a chunky crown and leaving sticky sheet lacing in its wake.
This beer has quite the nose. Underripe pear and a little early morning dewey orchard must be what Mistral hops bring to the table. There's a soft note of wildflower and an herbaceous Noble hoppiness floating around as well. The sturdy malt backbone is formed with biscuit and cereal grains that bring a slight sweetness. The bubbles bring about that slight Belgian quality after a quick swirl but the herbaceousness leads when left to breath and relax. I don't believe I have come across these flavors in hop profiles before, very unique and fitting.
The nose translates rather well to the flavor. Pear and that dewey orchard again lead the way. There's a bit of the wildflower peaking through and a squeeze of lemon that adds some vibrancy. The herbaceous quality doesn't come along until after the swallow and it lingers. The grains are crisp and clean with biscuit and cracker again producing a perfect base for such an interesting hop profile.
The mouthfeel of this beer is spot on. It's on the lighter side of moderate with a buzzsaw of both carbonation and bitterness, the latter grows with each sip. It's amazingly crisp and refreshing. The finish dries out instantly and leaves you wanting another drink, also instantly. The dryness and bitterness both linger long after each drink. This beer could be consumed by the gallon.
Well, another winner from New Glarus, I guess. Surprise, surprise. This beer is as beer should be. It's crisp and nuanced yet rather bold yet also refined. Each successive drink is better than the last until it's gone and you have to go get another.

Clear straw with a 1/4 inch white head that falls slowly.
Lemon slight hint of pine, hints of malt.
"Explosion" of clean fresh hop flavor, pear and citrus (lemon).
Medium mouthfeel, lovely carbonation, bright finish.
A wonderful beverage, has hallmarks of a Pilsner - the Mistral hops come through well. Oh that Dan Carr would brew this more often.

This is a solid Czech pilsner with a nice depth of biscuity malt flavor and a slight spiciness from the hops. I would have liked to try this side-by-side with Two Women and Totally Naked but unfortunately didn't get the chance.

12oz bottle. Served in a willi becher glass. Pours a slightly unfiltered golden copper body, one and half finger white head, rings of lacing, lots of retention. Smell is lemon, a bit of crackery malt, touch of grain, touch of zest, touch of dry earth. Flavour isa clean zesty lemon and grain, light earth, bit of leather. Bit of resin. Fairly pilsner-esque through and through. Mouthfeel is medium bodied, good carbonation, slightly sweet and heavy finish. Light zest and lemon brightness on the finish. An overall solid pilsner with a good body and a nice clean hop profile to it. Not too light or too thin by any means.
