Smoked Dark Saison
Deer, in European folklore, are said to symbolize the gentle, enticing lure of new adventures. Brewed w/ pilsner, spelt, oat, special dark, & a few Nordic smoked Malts from Sugar Creek Malt Co. for some added Warmth and complexity. Hopped w/ hallertau magnum, & hersbrucker for a subtle hint of orange blossom. Fermented w/ Wallonian farmhouse yeast strain that produces funky, smokey phenolics, w/ a touch of tartness on the finish. Enjoy the adventure!

Carried to the curb from Beermiscuous.
It is worth being flexible on this one. My Deer has elements of the Sahti, the Nordic smoked malts. But, it also has spelt and pilsner, like from the continent and the saison. It has a Belgian yeast. But... the smokey malt rushes into the nostrils. What do we make of this? Bottom-line decision: the brewer calls it a saison and I'm sticking with that.
However... I did try this at the table, my key test of a saison. Barely a passing grade because the smoke is so powerful. So if any moderator wants to come along and change this eccentric to another style, I have no good argument.
Nonetheless, this is an enjoyable brew. It hangs together once I transcend the smoke. I like the Deer concept and its notion of adventure. Besides, deers are graceful in a world of woe. And I like Dutchbag, despite only having had two of their brews. And this Pilot Project seems very collaboratively cool. (I'm guessing I've had four different brewers connected to the Pilot.)
As for My Deer, beware the smoke and enjoy.
