Brewed in collaboration with Plant Shop Chicago and Casa Humilde Cerveceria, this farmhouse ale was brewed using Rocky Mountain Juniper tea and branches, plus Columbian Plums (Ciruelas). Lastly, a native yeast culture captured in the largest underground cave in the world in the Yucatàn Peninsula was used in fermentation. Conditioned for 2 months

If FBarber or another moderator wants to add what the can says (which is shorter than UnTappd's description), the can says this: "Yucatan Farmhouse Ale brewed with juniper& Ciruelas. A Tribute to Chaac, the Mayan Rain God and Protector of Agriculture." Also acknowledge that this is a collab with Casa Humilde. (Another favorite startup of mine that I visit too infrequently.)

For me, Yucatan Rain is close enough to a saison to include in this category. But, I wanted to know why UnTappd puts Yucatan in the "Other" farmhouse category. Ciruelas are plums, grown in Columbia and not Belgium. The other major "Other" comes from the yeast which uses a bacteria found in the deepest cave of Mexico. But if we celebrate the saison as "everything left from the harvest" and if we add the American crafter notion of "anything else that sounds good and can be gotten fresh enough", then I am satisfied with Yucatan being a saison.

As for what the drink does, it is certainly very good at the table and could become excellent. I had it with my own cooking of a balanced, but mildly spicy, tomato soup. And it everyone got along just fine. Possibly my only suggestion is to add some mild hops that help along herby foods.

I am more a fan or Orkenoy's brewing than its cooking, but it improves their brewing. I like both Orkenoy and Casa Humilde and am glad to see a Baltic-south-of-the-border collaboration, a difficult range of cultures to assimilate. But it just may be done here in Chicago, the Midwest's cosmopolitan metro.
