simple mexican lager here, clean on the ferment which is really probably the most important aspect of this, its also lighter in body than many, snappy and brisk on the finish, and with high carbonation, somewhat bland without the lemon or the lime they offer with it, but its clean and thats key in this style, refreshing then and very drinkable. pale yellow and mostly clear with a head thats faded by the time the server gets to our table, not an indictment of the beer but of the service, this place has slipped a little since they opened. i smell a simple grist, maybe some corn, but pils malt primarily i reckon, crackery and dry, and the grain is minimal in the flavor as well. there is a light balancing hop back end which i appreciate, and it sets up the lime wedge nicely, which i usually avoid but i think adds something needed to this, also fine with the lemon option. very light in body, and i can taste just a little lager yeast but it dries this out very well, each sip makes me want another one, and in hot weather this would be real desirable. in some ways quite basic, but on the other hand, it really hits the mark for the style and as a ripper with spicy or salty foods. well done overall, simple as it is.
