We’ve been super stoked and invigorated by what Gin barrels have brought to our blending program. Gin botanicals go off script in a mixed fermentation setting to bring an incredible, and sort of underexplored compliment to Saison that’s far less about the spirit and way more about the complex bill of botanicals that make the spirit. Roses. Creamsicle. Honey. Pine. Somehow on point for a winter holiday run, and also the middle of summer?

Appearance - The beer was golden in color with visible carbonation and an inch of white head.
Smell - The botanical notes of gin made an impression with funky notes around the edges.
Taste - Strong lime and gin notes led the way. The profile brought to mind a gin and tonic. The effervescent funk of the saison was a nice compliment, but allowed the gin to shone. Lime lingered in the dry finish.
Mouthfeel - The carbonation was bubbly and somewhat aggressive. It helped the dry notes to linger.
Overall - This saison was very well done.
