A few months back, we spent the day in Door County up at Baileys Harbor with our pals at Hacienda working to conceptualize a modern take on saison, utilizing some really incredible access to New Zealand hops they had that drive a lot of the fascinating fruit profiles in the IPA's they've become known for. And folks, wow, New Zealand hops are really something. Gigantic tropical energy here.

We whirlpooled a very light saison base beer with Nelson Sauvin and Motueka, and pitched a lab propagated mixed yeast culture produced by our colleagues to the south at Omega Yeast Labs. This culture is a mix of
Brettanomyces and "clean" brewers yeasts known to produce and highlight tropical fruit profiles derived both from fermentation and ingredient biotransformation.

We fermented the beer over 8 weeks in French oak, and dry-hopped again with Nelson Sauvin and Motueka. The result is a beer built like traditional saison, but brought to life using an exciting "new world" hop profile and an innovative and interesting mixed yeast culture.

FLAVOR: can of Dole pineapple juice, peach concentrate, passionfruit

Pale golden orange, ample foam, spotty lace.
Tropical passionfruit, green hops, peripheral Brett funk, sandalwood and oak.

Lemon, lime, peach, tropical NZ hop profile. Mild tartness and bitterness.

Light to medium bodied, spritzy carb, easy drinking. Well balanced and drinkable.
