Appearance: The body is a crystal clear light bronze that boasts low but steady carbonation, the pour produced a finger of head that did not lace nor retain itself. A bit dark by pilsner standards, but not out of the ballpark.
Smell: Grain, caramel and some mild hops on the nose, the potency is a bit low but everything I am picking up I am liking. Warming did bring out the hops a bit more.
Taste: Starts with grain and a hint of caramel I don't often find in the style, but that little touch of sweetness does wonders to reign in the earth and slight pine from the hops leaving this a very easy, quick and crisp offering.
Mouthfeel: The transitioning of this beer is what a pilsner should be, quick, clean with a slight dry snap that cleanses the palette. There is a mild hop aftertaste that quickly vanishes after a short time that is quite pleasant and restrained. The carbonation helps out the entire beer but it is a bit lower and pans out near the end, that and there is a slight bit of flavorless cling that seems to happen here, but it's not out of control.
Drinkability: Light to light medium in body, incredibly easy to drink, low carbonation makes it easy on the system, crisp and mostly clean and refreshing. It's a well done, well crafted pilsner, but it's also sort of its weakness. It needs something extra. Don't get me wrong, it's a great pilsner, but something like a unique hop spin, or some kind of yeast profile or something to make it just a bit more memorable, especially considering it's faltering in the first two categories.
Final Thoughts: The Paris Beer Company to me so far, has been a hidden gem in Ontario. This is another great offering which I will certainly pick up again the next time I am out that way, and looking to pickup some Camp 31 BBQ Sauce (they are a local BBQ restaurant). Just an all around good offering.
