This golden brett ale shows sweet on nose. Tangy, zesty, citrus, leathery funk, bedded in warming dry finish. Every bottle is cellar conditioned for 3 months before release. best enjoyed within the next 4 years, let the flavours evolve their magic.

Appearance: Once the cap was opened, the beer's carbonation overflowed the bottle, but I caught most of it, and it produced two fingers of head that produces good lacing and ample retention. The body is an opaque yellow with brown sediment collecting at the bottom of the glass.
Smell: Bisucuit malt that has a mild leather and predominantly sweet raisin bread aroma to it with notes of candied orange peel in the background. Potency is there, certainly although note quite as complex as other of the style. That said, it's solid.
Taste: Starts with biscuit malt with a mild raisin and leather note that seems to get sweeter as the orange zest, mild apricot come forward before ending with a bit of a chewy malt note and a slight herbal pang. I don't think I've had a Tripel quite like this, as it's doing it's own thing. I suspect they used some speciality yeast here.
Mouthfeel: Carbonation helps out the entire beer, and the transisitoning a little bumpy but still quite good. The aftertaste lingers on malt with only the barest fruit notes struggling to come back here throwing it off a bit.
Drinkability: There is very little in the way of bitterness here, and that leather brett note is doing a lot of heavy lifting to stop this from going into too sweet territory. Settles down well, and despite good showing of carbonation, it doesn't linger. Medium bodied too which is nice.
Final Thoughts: It's rare you see a Belgian style brew comming from an Ontario brewer. That said, it seems very much that anyone trying to tackle the style here is comming prepared and this is no exception. It's not going to compete with the true Trappist offerings, or the likes of Unibroue, but I really like that it does it's own thing and puts an interesting spin on the style. For that, this is certainly a brew I would recommend picking up, without question.
