Collaboration with Mindful Ales
Fermented with a blend of Brettanomyces and Belgian Saison yeast, then dry-hopped with estate-grown Amarillo and can-conditioned for lively carbonation, this saison is as elegant as it is expressive. Expect notes of peach pit, apricot, and lemon meringue, all lifted by a brisk dryness and rustic edge that keeps you coming back. Dry, rustic, refreshing…everything a saison should be.

Acquired a 16 oz can at a beer festival in Greenville, SC on 11-8-25. Canned 26 AUG 2025; consumed 1-3-26. Cold stored since acquisition.
Beer poured chilled gold with a beautiful white head that has sustained 10 minutes after the pour.
Nose has notes of barnyard, leather, and citrus.
Taste is a lighter pale malt base indoctrinated partially with Brett yeast that gives me funky barnyard and lemon pepper that does not overwhelm the flavor. Hopping brings a more than balancing abrasiveness that leaves a coating of pepper on the palate; 6/10 on my bitterness scale.
Mouthfeel is light bodied, super soft and refreshing.
Overall, i poured some of this at the festival and was very impressed.
