I like seeing progress this quick. I panned Azadi's only other saison eight months ago. And the pan went deeper than the typical problem of a weak yeast keeping Belgian-inspireds from being as inspiring as the best from Belgium.
Two months later, Azadi releases a very well-balanced saison. But I avoided it for six months and, just today, I thought I was taking a risk buying a 4-pack at the Pilot Project. Tonight I had Cochin with leftovers; but I will have it soon with Indian food and even Southeast Asian kitchens.
Cochin Looks only slightly above average, a nice foam but not a full foam. Smells of lemongrass predominate, but are gentler than most herbs and spicing typically used. Tastes also are balanced, with some pepper coming in to close. Refreshing and palate cleansing, Cochin should be able to handle lots of different foods.
I like Azadi and probably should drink it more; given it is right in my neighborhood. But they are young and, I hope, I still have time to enjoy them. I particularly like their concept "Born in Chicago/Heart in India" and how they explore brewing for those many cuisines.
