Double Barrel Strong Ale. Final iteration of a strong ale base brewed with our family at Timber Ales. After an extended boil, this spent 13 months in a Barrel Bourbon Store Pick from Circle Liquor. It then spent an additional 13 months in a whiskey barrel from Little Water Distillery that aged local honey before our usage.

On draught at the brewery. Served in a wine glass. It is a dark cola-mahogany color with a tiny, light mocha ring. The nose includes dark fruits, brown sugar, caramel, and sweet bourbon notes. Its taste is rich and complex. It is sweet with brown sugar, caramel, raisin, fig, and other fruits. The barrel effect is potent with both bourbon sweetness and dryer whiskey notes. Unfortunately, it is served quite cold but if you let it warm the flavors develop nicely. The mouth feel is thick - almost chewy - with low carbonation and it is surprisingly drinkable considering the 14.6 ABV. Overall, Old Doctrines is a big, delicious Strong Ale, which is not surprising having been brewed in collaboration with Timber Ales.
