The Seed: A Living Beer Project

On draught at the brewery. Served in a stemless glass. It is a clear, bright golden color with a snow white cap and soapy lacing. There is an unusual detritus floating at the top (mushroom?). The keg kicked after my pour which may explain the appearance. The smell is typical Saison with clove, coriander, and lemon peel but there are also earthy notes and some bold pine sprigs. Its taste is unusual to say the least. It opens with surprising sourness. In fact, if I didn't know better I would assume it s a spontaneous fermentation. There is a lot of funk but also a dense earthiness from the mushroom. It is also more bitter than a typical Saison. A unique flavor, indeed. The mouth feel is lite and crisp but the 6.4% ABV gives it good substance. Overall, this is far from a typical Saison but well worth trying.
