Shiro Plum is from a single barrel of traditional spontaneously fermented beer brewed in December 2018, with the addition of blueberry blossom honey in the coolship. At 8 months old, we transferred the beer onto 800 lbs. of NJ grown yellow shiro plums, a nearly 50% fruiting rate. After allowing the beer to referment on the plum skins and pits for two weeks, we racked the beer back to barrels for a further 10 months of maturation on oak. We then laid the beer down in bottle for 12 months of conditioning. Upon release, Shiro Plum will be 31 months old. The yellow plums show a golden hue with full, bright aromatics of pineapple upside-down cake, juicy plum flavors and a depth of stone fruit supported by a subtle, light honey character.

Slight orange pink hazy color with thin, bubbly white lacing and no carbonation. Tart and twangy fruit on the nose which follows straight through to the flavor. Slightly puckering and leaves a twangy, fruity residue.
