Elderflower is a blend composed primarily from our oldest spontaneous batch, brewed in April 2018, blended with a small portion of traditional spontaneously fermented beer from Fall 2018. Our team helped hand harvest a New Jersey grown European varietal of elderflower, which we cold soaked on the beer overnight before further conditioning the blend in oak for an additional five months. We then laid the beer down in bottle for an additional 21 months of conditioning, our longest bottle conditioning prior to release to date. Upon release, Elderflower will be 39 months old. The Elderflower bring a fresh vibrancy to the mature, well-aged spontaneously fermented beer.

Bottled October 2019 and recently deemed worthy for release.
Moderate pour yields a nearly one inch white head that disappears in seconds. Body is golden with a very slight haze and non-stop bubbles coming up around the glass.
Nose is funk and oak foremost, with a bit of fruity and floral elderflower aromas trying to peek through.
Taste is fruity, citrusy, slightly tart, slightly oaky, and quite delicious!
Mouthfeel is superb and rather surprising after watching the head recede so quickly.
Overall, a fine stab at spontaneous fermentation from Kane's side project.
