my first from precarious, this is world class. love the style, wish more american breweries would play around with it, and i think the addition of the wildflower honey here is pretty special, they did a fantastic job with this! between yellow and gold but less than brass, not that saturated, but not fully clear either from the tap, short fizzy white head. it smells amazing, bread yeast, old bread, but also fresh bread, rye bread, bread flour, i wonder if there is rye malt in this or just rye loaves, either way the bread smells good and proper, and the floral honey lightens it, otherwise doughy dense even though its pale and light, cut flowers, clover, white wine, pure sex, sort of cool bready slow fermentation too, maybe multiple ferments, or the bread ferment coming through, i love it, and all of this is here in the flavor, but the rye i suppose takes a little bit of a back seat, now just crusty heaty bread, a rustic loaf, and way more of the honey even though its never sweet, waxy, pollen forward, in bloom, in heat, heck this makes me in heat, something sexy about it, patient too, feminine, i love it. the honey profile is awesome, there is a dry maturity too, a champagne note, maybe ray wheat or buckwheat, light grain spice from the rye, the kind of oxidation it probably should have, and a resplendent effervescence that pops the whole thing off. i had to come ponder on this one awhile, like it didnt come to me intuitively immediately, much as i loved it at first sight, its sort of a slow evolving love affair. i need more from this brewery, this is world class, among the more unique examples of kvass i can recall ever having...
