fun little aged table beer here, maltier than expected, subtle on the ferment compared to a lot of their stuff, historic and timeless to me, minimally hopped, highly drinkable, almost a liquid sourdough bread thing going on here, but its delicate too, highly effervescent, and very well made. not quite clear from the tap and not quite pale either, short of amber, but its brassy and saturated looking, fizzy but not holding a ton of head, more body showing than its alcohol content would suggest. some younger brett character in the background, maybe some saison yeast too, but this curiously tastes in some ways like an english cask mild, but maybe more from the grain their than from the texture, and from the slight oxidation that works in its favor somehow. i get some light nuttiness from the malt too, some minerals, and it seems sort of autumnal to me. good carbonation, flavorful yeast profile, less wild than some others we had in here, but a nice contrast to the more tart, highly fruited, rather acidic and boozy stuff they had going on when we were in, much as i loved and love all that, this one hit the mark, needed on their menu i think. well done. would be curious to see how it would age in the bottle...
