a strong wild saison type here done on cab franc, not sure if other editions with different fruits exist or not. this could be second use fruit from their do not go gentle series, but thats all speculation, its just so much less saturated and intense than the cab franc version of that, which was just epic, a whole additional level of funky fruity goodness than this, but if i had never tasted that one, this would have floored me too. the fruit part is earthy, tannic, perhaps contributing some wild yeast element too, and its juicy and identifiable and still pretty bold, tart like the skins, mineral forward, slightly musty, i love it with this yeast profile, which is saison esters and mature wet animal brett. its off dry, the grapes pop the most right on the swallow. the sediment in this is a vector for flavor, but it does feel a little full to me, not quite delicate, even though its very well carbonated. the fermentation profile is at least as forward as the fruit here too. very complex, beer drinkers fruit beer right here. notes of cranberry and tangy raspberry in the fruit profile here, under ripe strawberry, even a plum thing. no sign of its alcohol somehow either. i am loving these guys right now, and this is another banger in their current lineup!
