This iteration spent 2023 aging in sauvignon blanc barrels with the blend of brettanomyces & lactobacillus started for our 2020 batch and used to for each subsequent one representing a continuing evolution from the first Codex brew to the present.

Slightly foggier than their base saison, appearance is burnt gold with a tall off-white head that clings in sheets and retains well and thick.
The slick medium-light body exhibits all kinds of characteristics coming off of just one sip. Skunky aged hops up front, a funky acidity somewhat similar to apple cider vinegar in the middle, ending with a buttered popcorn and shortbread exhale. As it warms, a touch of white wine influence becomes apparent, running along some oak that emulates toasted sunflower seeds.
Each component here is moderate, yet typical of more old world qualities--I'm thinking more in the lambic range--but stands uniquely on its own without interplaying as well with each other as you want them to.
