Bought two cans from Beer Drop and probably will drink them both (that's praise from me since this is my favorite style.) Canned the same batch and date as Bitterbill below.
My first from Seventh Tap, we start with the micro-review. I'm not sure how old this corporation is (BA starts last year and UnTapped and the 7th Tap website go back to 2016 and lists 229 beers.) But their story has been told before: three home-brew buddies get professional and make a go of it and bring some fun and focus to their community that is a university town grown bigger. All good... but I'd also have to search hard to find what distinguishes 7th Tap from the other 8000+ micros in the U.S. Hence, my muted Overall rating.
Zaison has got some French flair. But it also is just starting down the winding road of developing and keeping a Belgian yeast that can ever compete with the masters. Zaison's weak yeast shows first in its Looks, essentially a flat looking brew with almost no active proteins; rated average in my book. Smells are better, an interesting fruit medley that promises refreshment. It is delivered in Tastes and cleansing qualities of the tongue. Zaison is suitable for the table. I had it with a hard cheese and a piquant tomato soup and ciabatta and a French cheese bread. For now, I will keep the second can and see how much more versatile this saison is.
A Votre Sante ! (or however the Cajun dialect goes.)
11/9/22 Drank the second can with a heavy peasant soup/stew and Zaison was at home, though also not another repeat is likely.
