I'm trying to remember the last time I had a saison this dry.
Saisons salivate. They are a table ale that stimulates the buds to make food taste better.
Simcoe (I'm guessing) has a very limited range of food that it can improve because it dries out those buds so much that salivation is not encouraged. So my advice is to drink Full Bloom within that narrow range of foods roasted and sautéed and without lots of spices. (Think Belgian.) So in that sense, Full Bloom is a success and certainly worth trying.... although not the best economic value in brewdom.
Full Bloom opens with a good foam and it continues until the bottle is done. Smells drop a couple of notches, not enough fruit. Tastes... I'm going to called balanced, but as a malt-head I rarely lick my lips with hops this dry (pucker is my more common response.) This is medium-mouthed. A healthy, well-kept yeast makes this a good brew.
I'm liking Sundial, but I cannot think of an overwhelming reason to have Full Bloom Simcoe again. A good experiment to learn from.
