Draft offering at the source. The brew appears a hazy copper color with a white frothy topping that creates a full wall of lacing effect.

The aroma is toasty almost like it is lightly smoked with some earthy attributes leaning toward peppery spice.

The taste is fruity like pear and apple skins. Some crushed pepper and wild almost plastic notes before getting fruity and herbal towards the finish.

This is a medium bodied brew with a light amount of carbonation. Not really a fan of this despite understanding its fermented with a wild/foraged culture.

A: cloudy as f^$# - more so than unfiltered apple cider... looks like wort mid-fermentation, or finished ale long-infected... some wild foam at first, but it dies away to nearly nil... the degree of cloudiness alone will make you question whether or not it's safe to drink... 2.5

S: like musty, dried apple... oxidized cask pale ale at the onset of infection... brown paper bag... all this eventually mists off, leaving some actually pleasant floral and apple skin notes... 3.25

T: could probably use longer conditioning... similar fruit to the smell but without any sweetness... old peanut shells and/or the dried out nut meat within... tastes kind of like a haphazardly lautered, no-boil brew - reminded me of the first time I made sahti... much yeast afloat and coating your mouth, bitter notes likely from this... 3.25

M: a touch scrape-y... dry with an earthy, parching residue... 3.25

O: this will get better with attentive tweaking... needs to be aged longer - that's all I was thinking the whole time... wild yeast needs to be nurtured, molded... i'm curious about their brewing process with this one... 3+
