Double Dry Hopped Honey DIPA

Mosaic / Simcoe / Calypso Cryo / Strata

This beer is quite a handful & a bit out of hand. On top of the heavy hand of hops, Acacia Honey, WI Cranberry Honey, & Raspberry Honey, were added at both the brewing side & fermentation side, this thing is absolutely loaded with hops & honey. The beer also features Briess' American honey malt, adding a nice orange hue, backed by a heavy layering of wheat and oats.

Pours yellow and orange at the same time depending upon how the light hits it.

Smell: 4.75 l 5.0
Wow, Mandarin, Red Grapefruit. Mango, Peach, Strawberry, Watermelon, something earthy and sweet ---there's a lot going on here.

Taste : 4.75 l 5.0
Mandarin Orange, Red Grapefruit, Mango, Peach, Strawberry, Banana ---might I just say tropical ? After a Pine finish ---starts again, this time with Peach, and Pineapple ---a little sweeter. It turns to Banana / Strawberry , with yeasy esters. Next it is Mandarin Orange and then back to Pine ---that's an amazing rotation !

Mouth feel: 4.5 l 5.0
Solid, smooth, medium body, balanced, not overly sweet, not overly bitter, just lots of hop aromas and flavors dancing on the tongue. We've got the whole fruit salad, and now I've even got a late cherry taste to add the review; how's that for a finish?

Honey Dripper you say? Apparently I didn't read the cliff notes. I didn't know why, but now with a little bit of buzzing In my ear I do have the dripping taste of bee pollen and honey coming out of the side of my mouth.

Oh my God, 3X Honey sources? Dude, that's not at all subtle ---don't know how I missed that, except most of the sweetness ferments out leaving residual salts, nutrients, and only essence of pollinated honey remain?

Pours a slightly unfiltered orange color with a frothy white head that leaves big splotches of lacing on the glass. Gorgeous WCIPA.

The nose features lots of honey reminiscent of Bit o’ Honey candy, and also citrus notes, including tangerine and lemon zest, and some berry notes as well.

The berry notes are more prominent on the taste, and delicious, but this beer is centered on the dance between the tangerine and lemon zest flavors playing off the deep honey flavor. So drinkable and flavorful.

The mouthfeel is full and very dry, adding to the drinkability. This is so well executed, and points to Central Waters’ prowess as a brewery.

12oz can. Bottom date stamp is 'CANNED ON 06/29/24'.
Hazy, pale gold colored body. Brief lasting white head but this disappears and leaves behind a moderate surface storm. No lacing.
Aroma is thick with hops that express orange, berry, floral, and woody.
Taste is mainly citrus (orange, lemon, and lime) but also honey wrapped assorted berries. Has a woody and earthy aspect. Low bitterness but definite hop grass and sticks. Smooths out in the aftertaste.
Initially thinner than medium mouthfeel, but also soft and slightly sticky. Higher ABV% is masked. Quieter carbonation.
The various honeys used in the brew process really provide a summer produce vibe.

i never really knew central waters as a maker of wonderful ipa types, not that i didnt like their offerings in these styles, i just never really encountered many of them until i visited their milwaukee location recently, and it rules. turns out they kill it at ipa too, no surprise, and this one is really evolved. massively dry hopped, hazy but not heavy, packed with some unique origin fruit honeys, exotic in that way but so approachable as a beer, the body is light for the style, the alcohol is well hidden, and there is almost no bitterness, all the intangibles are here, and along with their incredible places and spaces, this is an ipa of the year candidate for me this year, wow! the color is pale, light even for a double, average white head on top, moderate haze, no sediment, fine carbonation. it smells like fresh flowers, tangy red berries, lemongrass, not quite ripe melon, lime, and herbal tea, really distinctive, almost waxy like raw honeycomb, and thats there in the flavor too, yet this somehow isnt too sweet when taken as a whole. the honey is sort of woody, floral, i get honeysuckle, almond, heather, oak, its awesome. high pollen, low residual sweetness. the hops pop too, id guess a cryo type product making it pop up front without ever going green. some pine and gin notes as it warms, white grapefruit, gooseberry, white currant. lots of body but really not a ton for what it is, smooth and dry grainy, not quite hully or husky but more than simple cereal character, just right for the hops, and the honey does a lot of the talking and walking in this. clean ferment, just enough left over after each sip, wonderful drink overall, dangerous with a well hidden abv. these guys are on point in so many styles it will make your head spin. pure glory here!
