In addition to the lemon-like citrus flavor, there is a strong herbal bitterness, and although the malt nuances are not as strong as in older IPAs, the use of a large amount of North American 2-row malt gives it a slightly stronger flavor without interfering with the hop flavor.
Phat Q, who has been helping us with our food pop-up in Mejiro since shortly after Inkhorn Brewing began brewing, is opening his shop, so last year we brewed a beer to celebrate the opening, and this year we brewed the second batch of Armadillo to celebrate our first anniversary.
The image remains the same this time, with a base of bitterness and malt character that will stand up to smoky BBQ, topped with the gorgeousness of hops. It may be a subtle difference, but some of the hops and yeast have been changed since last year.
The gassy finish and bitterness are balanced with the image of the tulip glass in which it will be served, so you may be able to enjoy a different side to this beer when drinking it in a pint glass at Inkhorn Brewing than when drinking it at Phat Q's event.

Half pint at the brewery.
Crystal clear and bright gold. No head, poured to the brim. Smell is grapefruit peel, jasmine, honeysuckle, and vague floral. Bright. Taste is similar, but leans hard into the grapefruit rind bitterness with a bit more of a pine vibe. Mouthfeel is light, clean, smooth. Impressive IPA.
