Quimera Brewpub "Cherry Sour"
From a brown glass bottle with no volume listed (it's 33cl). 4,50€ direct from the brewery.
Notes via stream of consciousness: The volume is not listed on the label but it appears to be a 12 oz./33 cl. brown glass bottle. A pink head of foam rises up during the pour but settles back into nothing within seconds. The body is a hazy light ruby color. The aroma suggests acidity, a mineralish character from lactobacillus, and nondescript fruit. The taste is tart, vinous, mineralish, oaky, and just a bit cherry-like. I can't really come up with any other fruit that it could be beyond raspberry but it's not clearly cherry. That's OK though, I'd rather have it like this than with some artificial cherry added. It's quite tart but not bitingly so, and the maltiness that's there is balanced so that it's not sweetish, and very dry and refreshing in the finish. It's also fermented with Brettanomyces claussenii but I'm not getting a whole lot of Brett character out of it, just some mild leather and a background "barnyard" note. It's medium bodied on the lower end, and gently crisp but with a light bite or 'snap' from the acidity. Nicely done!
