Cost was ~19 euro at Cerveteca Lisboa in Lisbon, Portugal.

BOTTLE: 75cl. Green glass. Has the usual Fantome setup: a crown cap covering an internally housed cork. Label art is hilarious.

7% ABV. 14 & 15 August 2015.

Served cold into a teku. Allowed to come to temp over the course of consumption.

HEAD: Occupies ~20% of the glass with ~5cm width. Soft-looking, fluffy, frothy as hell. Good consistency and complexion. Retention is excellent - ~8 minutes. Thick coating lacing clings to the sides of the glass as it recedes.

BODY: Vibrant copper with bright orange hues. Translucent and transparent. No yeast/lees are visible, at least in the first pour.

Appears aptly carbonated. It's a good looking Belgian ale, but lacks any unique or special characteristics.

AROMA: Melon rind and floral notes introduce a more hop-forward character than Fantome is known for. Estery Belgian ale yeast. Lime skin. Fruit zest. Overripe fruit. Belgian pale malts. Flowers. Clove and maybe coriander, but ultimately this lacks the signature spicy intricacy of Fantome's best beers (saisons though they are, unlike this).

Fresh yet rustic at the same time. The lime edge is a highlight, and the ale seems balanced based on the aroma.

Mild aromatic intensity.

TASTE: Lime (juice, zest, skin) and Belgian pale malts dominate. Flowery (from flowers). Floral (from hops). Balanced sweetness. Subtly spicy ale yeast. Some rind and overripe fruit. Grassiness. I try to pick out the herbs this was brewed with, but it's beyond my ability.

Not Fantome's most intricate work, but complex for a Belgian ale, with good depth of flavour. Flavour duration is average (to style). Flavour intensity is appropriately moderate.

Cohesive and pleasant, though it doesn't quite come together into a gestalt whole of a beer.

It's worth noting I find no brettanomyces character here at all.

TEXTURE: Refreshing, prickly, medium-bodied, delicate, smooth, and dry (though a slight starchiness does give it a blip of coarseness mid-body). Well-carbonated. Raised acidity.

Not oily, gushed, hot, boozy, astringent, harsh, or rough.

OVERALL: It's an enjoyable complex Belgian ale with a nice balanced flavour, but those Fantome fanatics hoping for an intricate saison will need to adjust their expectations. I'm not sure why beers in the Sante series keep getting slapped with the saison label (or why Fantome keeps getting pigeonholed as a saison-only brewery). This Belgian ale is lovely work from Fantome and is probably my favourite in the Sante series from those I've heretofore tried, but its high price will deter me from a second purchase, quality as it is. Well worth trying once.

Santé 1-19 vertical.

Hazy yellow body with a small white collar. Aromas of various herbal scents, mint, tea, grass. Belgian yeast and tea with a hint of citrus. Lots going on here.

750ml corked and capped bottle into a matching Fantome tulip. This looks chalky like orange juice with a white cap that fades leaving stringy lace.

It smells bright and zesty with lime then some classic saison phenolics come into play smelling like clove and more mild fruit like apple/pear/banana.

The taste has a bright lime zestiness that imparts some bitterness before classic saison flavors of wheat, clove, banana, pear and apple. As more sips are taken this goes into a grassy realm with warming alcohol becoming evident.

This is on the richer side of medium body with moderate carbonation. This has a familiarity about it in the vein of a prior tome release - tous djapes but more classic in a saison sense with firm yeastiness. Bot sure how I feel about this one, its enjoyable but very clean tasting. I think some time is necessary to let the house charater shine but right now the lime component is quite enjoyable even though I dont think it melds well with the clean yeast phenolics.

Pours a nice looking gold / orange. Plenty of carbonation. Aroma is citrusy, with some peppery spice. Orange, lemon and lime on the nose. Taste has that fruity, almost Capri Sun-like juiciness that Ete and Tous les D'iâpes had, but is balanced with pepper and spice.

This beer is fantastic now, and will continue to get better as the Fantome funk starts to become more prominent.
