750 ml bottle from Beer Mania in Brussels. A drunken sumo wrestler in a moo-moo graces the label.

Pours an excited hazy orange with suspended yellow and brown sediment and very active carbonation. Truly a gusher with a thick white head.

Spicy aroma with orange and other citric notes. Noticeably large yeast presence.

Hints of winter unfold through all spice and nutmeg flavors. Citric finish with touches of lemon.

Mildly funky, very yeasty, slightly acidic body.

Drinkability is average.

Not one of my favorites from Fantome. Just way too yeasty.

Shared bottle at RBNAG 2011. Cloudy golden colour, large white head. Lovely aroma of lemons, lime and pomerans. The flavour has a citrussy sourness but is not extreme. Fairly dry and light bodied.

This bottle is approximately 7 years old at the time of this review. 750ml corked and capped poured into a matching Fantome tulip. The cork comes out with a loud pop and streams a beautiful light golden color with a firm finger of white bubbly head.

The aroma is delicate with a fruity and floral quality almost like pear and apple with an intoxicating sweet perfume-like essence of herbs and mild cheesy, earthen funk.

The taste is clean with pear/apple skins blending to soft caramel sweetness, lemony tartness, earthy brett and plenty of floral/fruity aspects with a light fruity alcohol warmth.

This is medium to light bodied, modestly carbonated and effortlessly drinkable. It is very delicate with different nuance to notice with each sip. Absolutely lovely with a citrus character that emerges as it warms. Would never guess this is a 7 year old saison, it is in a class of its own. Fantome at its best.

Big thanks to a generous trader for this one. Served in a Fantome tulip. Pours a moderate golden color with a nice head. Slight melon and grassy character with a touch of lemon in the background. Very dry and a bit of acidity. Bit of stone fruit. Looking forward to trying this one again.

Bottle at Eb's
Comes to the table a slightly hazy yellow color with a smallish white head that shows moderate retention. Spicy peppery aroma dominates my nostrils and eventually is joined by a hint of funk and some light citrus fruits. The flavor is also spicy funky and peppery with bits of caramel and citrus thrown in there for good measure. Medium to light body with a spirited level of carbonation and a sweet zesty mouthfeel. This is a nice beer, I'm glad I got to try it, but it really wasn't my favorite.

Bottle at Fantome-a-thon 2012

A murky orange pour with a small off-white head. Opens with bread and caramel aromas followed by a strong citrus peel note. There’s a hint of lemon and a light tartness to it. Quite a bit of spice and a bit of a mustiness to it. The flavor is quite sweet, but still retains a nice funk character and a moderate spice.

Bottle at the Quebec pub "l'autre oeil".

A: never too sure how to judge appearance on a loose style like this. Kind of a pale amber. No head no lacing.

S: quite sweet. Honey, maple, Etc. Quite floral as well. A bit if damp stone like scent - a bit musty. Not sure what the spices are.

T: pretty sweet up front. Quite well hopped. I was told this was a really fresh bottle. No skunk from the green bottle. I'm trying hard to identify the spices... Uggggh really trying! It's fairly unique but not overwhelming.

M: I was going to give the mouthfeel a 4, but after realizing how comparitvely sweet this beer is, it must be said how perfectly drying and effervescent this is on the palate.

Overall I'm honored to find this rare and exceptional beer. It's not the best Fantome I've had but final product exceeds the individual qualities of the beer.

Poured into a Cigar City snifter. The body is slightly hazy with an almost clear orange hue. A thin white head forms at first, but then fades to a thin collar of bubbles.

Lots of sweet, somewhat floral, honey on the nose. Light Belgian spice. Sweet malts with a faint slice of apple. Touch of fig.

Honey, toast and yeasty spice on the tongue. The honey and bread come through the most. Almost tastes like a saison/strong Belgian pale cross. Some light fruitiness, floral at times and a pinch of cinnamon. The honey notes are the most dominant, but the typical Fantome spices linger as well.

Mouthfeel is lively and sweet with a touch of alcohol. Slightly grainy.

Quite a good drink. I like the honey notes a lot. However, it seems to deviate a bit from the typical saison, but some of the other Fantomes do as well. Still very Belgian. If this were available at the store I would definitely be picking a few more up, but due to it's rarity I don't know if I would seek out another bottle; especially with the original Fantome saison being as good as it is, and easily available.

*Gusher warning*

Appearance: Bit of a gusher, enormous off-white head with some solid lacing. Appearance is typical fantome, straw-orange-honey-yellow with less floaties than expected.

Smell: Close to the regular fantome saison but a bit more sweet and sour. Bits of honey, coriander, and sweet grass.

Taste: Similar to the aroma, sweet grass, honey, and coriander. Perhaps some cantaloupe and melons as well. A bit more sweet and a bit more sour than the standard offering. Really tasty, I enjoyed this one.

Mouthfeel: Creamy and perfectly carbonated (despite the initial gush)

Drinkability: This bottle disappeared. Might be my second or third fantome (definitely behind saint roche). Very cool label, I have to figure out how to upload it. Always fun to try these randome fantomes, you never know what you are going to get and they seem to vary from bottle to bottle greatly sometimes.

A solid pour into my large Tripel Karmeliet tulip produces an almost three finger, pale tan colored head. The beer is a murky, pale amber color that shows a hazed, orange / red tinted gold hue when held up to the light. The haze is mostly a chill haze as this was clear before I put it in the fridge. The aroma smells of earthy spices; a mix of straw, a hint of something like grassy coriander, musty white pepper, a somewhat used straw hat and a floral note that melds into the next set of described aromas. Other aromas of lightly herbal honey, ripe melon and tart pear add a slightly more subtle influence to the up front notes and there is also a fairly substantial malt influence here. This last is purely form the pale malt / grain side of the spectrum with notes of hay-like grain, fresh pale malt flour, a nice cracker like grain character and even a touch of sweet malt. Spice aromas contribute notes of clove and pickled ginger. The aroma is quite nice and quite characteristically Fantôme.

Quite sweet tasting, especially when compared to the la Gillmoir that I had last night. The sweetness accentuates a solid fruitiness here that reminds me of pears, perhaps a touch of bright plum, some honedew melon and even a touch of musky cantaloupe and a peach flavor that becomes much more prominent as the beer warms up. The fruit / sweetness is the single largest contributor to the flavor of this beer. There is a supporting spiciness here that contributes woody pepper notes, an herbal grassiness, peppery carbonic acid and perhaps a touch of ginger that kicks in just before a strong finish of clove and a touch of phenolics and spicy esters; none of these notes are overly expressive, but instead form a background note that supports the up front notes. Despite the perceived sweetness, this beer is quite light and quaffable for a beer of this size; there is a touch of heft / viscousness to this beer, but this is still a quintessential Saison.

A really good beer, but it certainly seems a bit simplistic (despite all the notes here) after the la Gillmoir that I had last night. Still this is a fantastic beer from this brewer, one that I would be happy to have a lot of on hand. For those that prefer a touch of sweetness and a more bright fruit character then this might be the ideal Fantôme Saison (especially as compared to the la Gillmoir that I had last night).
