750 ml corked and capped bottle. Served in a Teku, the beer pours a slightly hazy dark gold color with about an inch or so off-white head. Head retention and lacing are both good. The brew smelled a little skunky when I first opened the bottle, but that went away quickly. Other than that, it smells like funk, apricot, hay, citrus zest and some pepper. I think the taste is similar to the aroma but with more of a kick, and there's also the addition of some earthiness, herbal, clove and grainy malt flavors. I think the peppery spice is noticeable but it's not hot by any means, it's more of a vegetal pepper flavor to me. Mouthfeel/body is medium, it's smooth and easy to drink with a good amount of soft carbonation. I liked this one overall, the longer I drank it the more I liked it. Worth a try especially if you like the Fantôme brews in general.

Bottle. Lot 10 08 22. White head. Lace. Cloudy orange gold.
Classic over spiced tome here. Bitter and a bit medicinal/overly Bretty. Has some herbal notes. Orange zest. Floral bitterness. Can’t pick up on the peppers really. Maybe in the finish, but so faint. Decent.

neat one here, collaboration with a brewery from chile, and a beer that i think has some chili pepper in it, really strange, even by the already impossibly strange standards fantome has established, i liked this, but i was also challenged by it, a beer definitely enhanced by spicy asian food, truly peculiar on its own, but sort of somehow still par for the course for these guys, an esoteric partner, strange and unspecified ingredients, fermentation forward and curious as they come, but also delicious, cant get enough from fantome! its got an awesome label, a high white head on the pour on top of relatively clear pale golden liquid, super active and effervescent, even hard to control. the nose is weird, super sulfur forward, wet soil, white pepper, green glass skunk, and maybe some raw wheat. the yeast is familiar as fantome, but its also slightly bretty to me this time, lightly more funky than most. the flavor is crazy, wet slate, concrete, boiled eggs, possible rye spice, and legitimate heat factor on the swallow, on the tongue and then in the throat, i exacerbate that with my food pairing, but its there from the beer on its own too, i swear. black and white pepper, hay and straw, wet farm animal, bitter tea character, soapy notes, limestone, bread dough, maybe sourdough, and tons of light struck and oxidation influence too, even more than normal for fantome, but again i find it adding something integral to the beer. i dont get a lot of chili pepper flavor, but i do get that sort of heat from it, maybe a light oily thing there too. amazing carbonation, frothy texture, and dry finish, special level bottle conditioning here, and overall just a head scratcher. not everyones favorite in our group, but i have been a fantome apologist all my life, and im not about to stop now! i think especially cool with spicy hot pot food pairing!
