Belgian Beer Club De Heikantse Bierliefhebbers was involved in the commemoration of the "Boerenkrijg" (the Flemish peasant war against the French occupier) in 1798. On the occasion of the 200th anniversary, Dany Prignon (Fantôme Brewery) brewed the beer Caeymaex for them. Mr Caeymaex was, at time of this war, mayor of Berlaar and leader of a small peasant army that fought with the French.

Original 1998 bottle. Decanted.
The coloration here is a bright, rust-hued amber. Completely unfiltered, and nearly opaque. In addition, there is hardly any discernible carbonation agitated when poured from the decanter.
Immediately the nose comes forward both soft and mild. Notes of honey compliment a floral base. In quick succession there’s a distinctly spiced, peach-forward component that is almost similar to a cognac or even vintage Grand Marnier.
The palate contrasts beautifully in its delicacy. Soft, and still so well-carbonated for being 26 years old with a soaked cork and rusted, moldy cap. It’s fairly dry, with a damp, woody character very noticeable on the front end of the palate. It retains a noticeable albeit subtle tartness on the tail, with hints of mustiness contrasted by apricot and lemon zest brightness.
The mouthfeel on this relic is superb given its age. Light and soft, with a perfect level of acidity. The finish is dry and tart, with beautiful length that lingers well into the next sip.

Light copper caramel appearance with a foamy bubbly light layer of head. Notes of leather, tobacco, earthy funk, yeast, mild oxidation. Medium body, light carbonation.

750ml bottle poured into a matching Fantome tulip. The brew pours a brilliant clear orange color initially and gets progressively clouded towards the bottom. A white finger of head rests atop and produces some spotty to webby lacing effect on the glass. A swirl revives a finger back to the surface.
The aroma opens up a bit oxidized and reminescent of wet cardboard. It then blends into something fruity like apples and hints of vinegar. A maltiness is present smelling like caramel and toffee with a sweet edge that ends abruptly with earth and brett funk coming into play.
The flavor is surprisingly tart and fruity/funky. Some leathery earth and hints of oxidation increase the perceived dryness of the brew. Just like the aroma suggested, there is a solid malt inclusion tasting of caramel to toffee with a grainy sweetness. Towards the finish, it gets progressively more earthen and dry with brett.
This is a medium bodied brew with a modest amount of carbonation. It had a mild alcohol warmth but is very enjoyable and easy drinking. For a saison that is somewhere in the range of 15+ years old, this was a downright amazing experience. I am shocked at how well this has held up and how much I enjoyed it. After all these years, it had that baseline character that screams Fantome. Endless thank yous go out to BA Claaark13 for trading me this gem.

The beer is a murky orange color with almost no head. Aroma is full of cork. Quite a bit of butterscotch to it as well. There’s a mild fruitiness, particularly citrus rind. A hint of tartness along with some grass. The flavor is a bit on the sweet side, mostly butterscotch and bread with a little sweet fruit. Mildly funky with some grass and straw, still a fair amount of cork, too. Lots of orange flavor to it, too.
