Correct me if I'm wrong, but several years Achel had to close as a Trappist brewery because it lacked a monk on-site as a brewer. Subsequently, they reopened as a certified Abbey brewery and the label of this Singel bottle has that Abbey Ale logo... (Which I'm seeing more of, having just had a long weekend in Flanders and gotten quite a haul to take back to London.)
Achel's Singel is a Patersbier, a table ale of Flanders; similar in purpose to The Saison, being the chief table ale of French-speaking Waloonia. But being an abbey ale that monks drank, the patersbier is more modest in ABV and hops and, simply, makes the meal better. All of which Achel's does. However, it could have a more lively yeast. While it gives me a big head, the bubbles are quite large and fade to minimal foam and lace and protein swirls. Also barely above the average Blond, Achel's Smells fruity like a Belgian; but not intense given the lazy yeast. Tastes are balanced, if not indistinct; but that's OK because this is about going well with the food. And Achel's did well with my world-famous vegetable stew. Singel is not quite medium-mouthed; again and in sum, a better yeast would help.
While Kluis' website does not have much about the Trappist history, this beautiful setting remains a beautiful brewery and its second lease on life gives brewery tours and has a cafe and events space. So there is redemption, just work on the yeast. Proost !
