Appearance: Crystal clear medium amber in color, with a large, slightly coarse, off-white head, which slowly fades to a scattering of foam on the surface. The lacing is moderate, forming an unbroken, but irregular ring about the glass wall. The carbonation is profuse, fine-beaded, and slow-rising.

Aroma: Rather strong alcohol notes in the aroma, although these are quite gracious, also toasted malt, caramel. dark bread, nuts, and subtle dark fruit.

Taste: Opens with notes of dark caramel, sweet alcohol, and toasted dark bread. The taste progresses to strong malty notes, caramel toasted nuts, and restrained dark fruits. The alcohol is pleasantly warming. Finishes with a pleasant toasted malt flavor, and mild herbal and earthy hops.

Mouth feel: Smooth, soft, pleasant and very full, with just a bit of carbonation.

Drinkability/notes: This review is the result of pulling some very old examples out of one of my beer refrigerators. Though it has been cellared too long, it is still simply excellent. What's more, I regret I'll probably have another example of this superb beer, which though classified as a Traditional Bock, would stand very well against a Dopplebock.

Presentation: Packaged in a standard twelve ounce brown glass longneck bottle with a pry-off crown, served in a South American-style Pilsener glass.

I've had a couple bottles of this squirreled away for a while now. Thought I'd reviewed it previously but I guess not. Majority of the reviews are >18 months ago, with only one review in the past year, so it seems like this one flew right by like a flash in the pan. Not currently listed on their website either. Huh. I wonder if they'll make it again. Hopefully they will after reading this review.

12oz single, code 109, served room temp in a tulip.

A: A hard pour puts up 2 fingers of spongy light orange-tan head atop the crystal clear cherry red brew. Head fades to a single layer of persistent bubbles and a healthy meniscus hugging the glass, then gradually disappears completely. No lace.

S: Sweet candy sugariness with a lot of complexity. Up very high in the nose it has a really sharp honeycomb edge, very prominent. Then some light malt sweetness mixed with cherry candy forming the body of it. Malt starch/ body is felt in the nose more than it is smelled. Tiny hints of Robitussin-type EtOH and liccorice.

T: Very very smooth and subdued flavors. Candied cherries, coconut cream, tobacco, finishing with mild spearmint, liccorice, more tobacco, and mixed herbs. Really complicated but hard to describe, I could throw up a dozen more descriptors but not be at all confident in any of them. Wish I had a case of this to explore and study it more fully.

M: Nice viscosity without being thick, very well-balanced, soft silky carbo. EtOH very well hidden. So damn smooth, wow.

D: Super silky smooth and soft, wow. Pretty sure I remember this one being a little rough and unrefined before, when I cellared it 1+yr ago, but it has aged extremely well. Sure wish I had stashed away more of it. Only got 1 bottle left after this one.

Lot of reviews mention harshness and excessive alcohol, and that seems to jive with my memory of this brew. But boy, did that ever work itself out with some patience and aging! Phenomenal brew at this point.

12oz bottle served in a snifter.

pours a nice, translucent deep orange / copper tone yielding 1" of off-white / beige head. retention is middling as it dissipates fairly quickly into a think cap, collar around the glass. lacing in patches. nose is decent if somewhat unremarkable, led by a wallop of sweet malt; secondary notes of apple and a floral / herbal character.

more of the same translates to the flavor. sweet and malty with the apple and floral / herbal pulling through. boozy kick to the finish. medium-full bodied mouthfeel with average carbonation.

overall i'd say this is an above average offering, though not by much. fully quaffable, but definitely not my favorite from the leviathan series.

A-Clear orange amber, little carbonation and one finger head

S-Sweet malt, some roasted malt and even a little bit of alcohol.

T-Bread and buttery malt, alcohol is no longer present and there is some bitterness.

M-Medium bodied, smooth but lacking in carbonation.

O-A nice Bock, very sweet at the tip of the tongue. However the alcohol is the nose is a drawback.

Enjoyed in a pilsner glass

A: pours a crystal cleae light golden color with a slight reddish hie, a ton of carbonation bubbles, pours witj two fingers of pure white head that is creamy and lingers for a decent time, leaves minimal lacing
S: Citrus and fruit sweetness along with a bit of depth from a maple syrup like note
T: begins with a nice depth then kicks into a taste I would compare to apple cider, apple like taste lingers on the palate
M: medium carbonation, leaves a dry but crisp taste on the palate which once again I would compare to apple cider
O: a nice brew, no hint of the 9%. She drinks nice
