For this cocktail, we kept the recipe simple and used two local products that truly complement one another: beer from Epic Brewing and gin from Beehive Distilling. This cocktail is all earth on the nose, the mouth is grassy, floral and spicy, and the finish is dry. It really encapsulates what Utah’s herbs are about.
4 oz Epic Brewing Utah Sage Saison (or another Saison, like the Dogfish Head/Stone/Victory Saison du BUFF or Stillwater’s Cellar Door)
2 oz Beehive Jack Rabbit Gin
3/4 oz fresh lemon juice
3/4 oz simple syrup
Combine gin, lemon juice and simple syrup (one part sugar to one part water) in mixing tin. Add ice and shake for four seconds. Strain into a collins glass over two large ice cubes, then top with the sage Saison. Garnish with fresh sage. ■
