We chose Voodoo Brewing Company’s Good Vibes IPA for a beer cocktail because it’s crisp, hoppy and has super dank fruit notes. Bluecoat Gin adds brightness and hints of flowers and citrus to the cocktail, while Bonal, a French aperitif wine infused with cinchona, gentian and herbs of the Chartreuse Mountains, gives additional depth and complexity.
6 oz Voodoo Good Vibes IPA (or another IPA, like Caldera IPA or Racer 5 India Pale Ale)
1 oz Bluecoat American Dry Gin
1/2 oz Bonal
1 oz fresh grapefruit juice
1/4 oz Rosemary simple syrup
1 dash Peychaud’s Bitters
In a mixing glass, combine the gin, Bonal, grapefruit juice and syrup and shake vigorously. Strain the contents into a chilled, 18-ounce draft glass garnished with fruit slices, and add the IPA. Fill with cracked ice and top with a dash of Peychaud’s. To finish, garnish with a large grapefruit twist and a burnt, smoking sprig of rosemary.
Rosemary simple syrup instructions:
Combine four fresh rosemary sprigs, one cup sugar and one cup water in a saucepan. Bring to a boil, stirring occasionally, until sugar dissolves. Remove from heat and let cool 30 minutes. Pour syrup through a strainer into an airtight container, removing the rosemary. Keeps in refrigerator for one month. ■
