Chef Daniel Burns and Evil Twin founder/brewer Jeppe Jarnit-Bjergsø came together to create a beer bar (Tørst) and restaurant (Luksus) synthesizing what the industry had been tiptoeing around: elevated cuisine paired exclusively with beer. Burns, like “grown-up Simba from The Lion King,” as René Redzepi writes in the foreword, is methodical as he creates often nostalgic recipes. Meanwhile, Jarnit-Bjergsø follows his intuition, brewing beers like The Cowboy (a smoky Pilsner inspired by the Marlboro Man) and handpicking Tørst’s 21 taps. In Food & Beer, we’re led through a day in their Michelin-starred kitchen, which begins with a clipboard of the day’s tasks. Part 1 examines the 10 flavors that beer and food have in common, through Tørst recipes and beers. Part 2 features the high-end Luksus recipes and more pairings. Putting their expertise on the page shows Burns and Jarnit-Bjergsø really do believe in food and beer as a populist movement.
