I have been a fan of sour ales ever since I tried New Belgium’s La Folie. I figured it would be great for a cocktail because you would have acidity without having to add any citrus at all. In Emily’s Folie, the beer combines with peach brandy, cognac and honey to create the flavor of a peach tart. I would highly suggest having this as an after-dinner cocktail, with a boozy dessert if you will!

1 oz Pierre Ferrand Ambre
3/4 oz  Mathilde Peche
1/2 oz honey syrup (3 parts honey; 1 part hot water)
2 oz New Belgium La Folie
1 whole egg

Combine all ingredients and vigorously shake with ice.
