Hop Dog

Crafted at the Black Diamond in Spokane Valley, Wash.

At the Black Diamond, a family-owned and -operated ale house and billiards hall, we focus on fresh, locally sourced craft beer and food. So when we created our craft beer cocktails, we wanted to keep them in tune with this theme. For Hop Dog, we utilize freshly pressed grapefruit juice and our house beer, brewed right here in Spokane by Twelve String Brewing Co. This refreshing cocktail will provide a welcome twist for any hop lover.

1 oz Beefeater Gin
1/2 fresh grapefruit, pressed
8 oz Black Diamond Pale Ale (or any light- to medium-bodied ale with moderate bittering hops)

Mix all the ingredients together in a pounder with ice. Pour in shaker, and mix together to develop a nice frothy head. Serve in a pint glass. ■
