A 'Co-Loveration' between two brewers inspired by their mutual sincerity for: Saison, wild yeasts and, an artisanal approach towards using unique ingredients. This recipe was structured from a 'Suav' theme...30% Sauvignon Blanc must, 100% Nelson Sauvin hops, and aged in first run Sauvignon Blanc barrels. A 100% Brettanomyeces Saison, naardensis and farmhouse brett are the yeast choices. We use a light addition of grains of paradise in this beer for a dry drink-ability, and added goose berries to the barrels to match the hops.

Partially cloudy, light yellow body; nice carbonation; thin yet lasting head, thin and white. Barn-house funk and aged citrus aroma. Subtle malt and dulled citrus notes; very, very mild tartness; slight bitterness; white grape must. Medium body; dense and velvety; soft; subliminal dryness.

Hmm, yes. Sublime, aged, and perky. We have an unknown beer age, It all seems to work. Rustic and tasty.

Pours a mildly hazy straw yellow with a thick mousse like white head. Smells very winelike. Some volatile acidity, gooseberries, fresh cut grass, and honeydew. The taste has a mild honey sweetness with a well structured fruitiness. Again reminiscent of white wine. Effervescent carbonation and light bodied. Very enjoyable all around. Balanced acidity that leaves a clean finish and the acidity refrains from being the center of attention.

Teaming up with the brewers at Green Bench, the Trinity of beer stops at two. But their collaborative beer is a three headed monster of Sauvignon character: sauvignon grape must, sauvignon wine barres and Nelson Sauvin hops.

Pale straw and sparkling effervescence gives the ale a white wine spritzer of an appearance. With bubbles a poppin' the nose is a rife blend of high farmhouse funk, weathered citrus and orchard fruit, strong vinous complexity and the charm of ripening parmesan. Biscuity and honey-like, the taste opens with flavors of sourdough, the lightness of hard candy and a hint of taffy.

As the barnyard perfumes escape, the flavors of grain and fruit align on the tongue with whole wheat, dough and those strong overtones of white wine. The sharp sourness of gooseberry ride along side of wine must, pear esters and a light medley of cider, melon, lemon, under ripened orange and white grapefruit. A final pep of spice pulls from the beer's rustic and unrefined musk in the form of black peppercorn and citrus.

Medium light in body, the beer's mild biscuit and doughy body allows for a tart finish that hinges on sourness. Its dusty, woodsy and hay-like dryness gives a powdery tannic balance and with a brief echo of pungent horsehair and saddle leather for a lasting impression of funk and fauna.
