A: The beer is clear golden yellow in color and poured with a finger high white head that slowly faded away, leaving behind a bit of lacing on the surface.
S: The nose has moderately strong aromas of spices and yeast.
T: Like the smell, the spicy flavors stand out in the taste but are in no way overpowering.
M: It feels medium-bodied on the palate and has a light to moderate amount of carbonation. There are some hints of dryness in the finish.
O: The spiciness and dryness lend some refreshing qualities to this beer.

From tap to snifter at ChurchKey on 5/30/11 at the DC premiere.
This Peppercorn Saison is a collaboration between 3 Stars Brewing Co. in DC and Evolution Craft in DE.
A: Hazy liquid gold. It's 14k and simply marvelous. A nice one finger head and some decent lacing follow.
S: Hints of cracked black pepper and that trademark Belgian yeast essence. A twist of lemongrass and ripe banana are minor players on the back end.
T: Not as intense or spicy as I'd expected. It's subtle, and the pepper sneaks up on the finish. It starts a bit acidic, with a touch of lemon rind. The mid expands and explodes with earthy yeast and fresh French bread heel. As mentioned, the finish carries a slight kick, though it's more of a lingering twinge in the back of my throat.
M: Really, really well done. It's quite smooth and rich, it's luxurious and prefectly carbonated. It's an absolute pleasure to drink.
O: Congrats to Dave and Mike (and Tommy too) for creating one hell of a tasty Farmhouse Ale. Their Syndicate Saison is sure to be a big summertime hit during the dog days here in the District. The bar has been set high, and I'm sure 3 Stars is up to the task of meeting or exceeding the high quality of The Syndicate. Highly recommended, and worth seeking out.
