cool collaboration with nola here, apparently they did a clean version too, but i was drawn to the brett. cool packaging on the bottle too. not enough amber saison types out there, always pale or black with nothing in the middle. clearish deep amber color to this, lots of bubbles piercing through, and a tall tan head that leaves spots of foam all over the glass. the aroma has a woody vibe to it, wet lumber, white pine, damp. the brett is new and immature, i wish i waited awhile to drink this one. its not sweet or anything, but the brett seems underdeveloped next to the saison strain its working with, just a little musty funk to it, same in the flavor. i love the malt here though, perhaps a longer boil to condense the sugars here, its intense and reminds me of molasses. its not overly sweet though, the yeast is subtle in flavor but does a great job drying this out. while i was in the taproom here i had a beer called tanager that was a brett ipa, and the brett was so much more developed, i wish this was like that. great carbonation though and a lot of body, it really is a pretty uniquely flavored beer even without a majorly assertive wild side to it. i think these guys make some amazing beers, and it was fun to try one of their more adventurous styles. well made for sure, just perhaps a little young as a wild ale...

Pour is a dark Amber, cherry red hue. Pretty thick 2-3 finger head that doesn't dissipate quickly at all. Very foamy and sticky looking head giving off moderate lacing.
Smell is lemon zest with some orange peel. Funk, sourdough, sweet tart candy.
Taste is similar to the nose. Lemon zest, orange peel, very sweet bread, some cherry and dark fruit, and more sour dough. Pretty heavy bread flavor, and heavy carbonationz

L: Pours brilliant cherry tinted amber with a 1” rapidly dissipating off-white foam cap that produces light splotchy lace.
S: Tart, lemony fruit aromas with light spice and a hint of light bread.
T: Lemony tart fruit hinting of cherry supported by a firm lightly sweet malt backbone.
F: Very creamy texture, above average carbonation and a medium to medium light body.
O: A full flavored saison with a pleasant blend of sweet and tart fruit.
