In January of 2014, supplied with many ICUs of fresh juice and zest, we sought out the comfort and open air of our natural surroundings. A simple wort of pilsner malt, wheat, oats and spelt was allowed to cool in the quiet winter evening, open to stars and all the best that our lands offer. After nearly three years resting in oak barrels and extended bottle conditioning, we present to you a complex, bright, citrusy reflection of our ever-growing vision for what beer can be.

Stunningly crystal clear orange--and I mean orange as in thoroughly from top to bottom polished citrine--under a very sparse, almost translucent blanket of white bubbles.
Nose is freshly fuzzy oregano and perhaps cedar.
Taste seems subdued perhaps from where it may have been early on, as it's barely sour, just faintly tart even. Funkier and oakier than the Flora Cuvee next to it, it features some aged cheese, and certainly citrus zest, accented by balsamic and hints of maple biscuit on exhale.

Incredible orange juice and orange zest flavors. I want a little more bubbles out of this, but it's tasty.

Pours a crystal-clear honey-gold body capped with just shy of a finger of creamy, off-white foam; the head settles fairly quickly, leaving a vague layer/few islands of cap, with a slight froth hugging the edges and an array of thick, soapy lacing spread across the walls of the glass.
Aroma seeps buttery Chardonnay through peppery orange zest and increasingly musty oak, with advancing passionfruit zest peaking at hints of composting apricot wrapped in a taut lacto-funk embrace and grain silo whiffs.
Taste opens to citrus zest coating a funky embrace, with accenting white wine developing vinous edges past the mid-palate as orange oils and myriad citrus zest intermingle on the back end of the profile.
Mouthfeel offers a light body and a modest fluff of moderate-low carbonation, levying glossy overtones into a soft, prickly contrast over the mid-palate as moderate tartness amplifies a gentle, underlying acidity into the back end.
Raw citrus must is embraced by sensory funk and an extensively vinous saturation across a deftly approachable rustic composition espousing layers of fruity, farmhouse finesse.

This one pours a slightly hazy golden yellow color, with a small head, and a little bit of lacing.
This smells like white wine, damp hay, funky citrus, orange peel, tart sour candies, and lemon.
This beer has been a long time coming, and it’s really cool to actually try it! There’s a solid but subtle citrus character to it, floating on top of some genuinely lambic like qualities here. There’s some funky wine and oakiness here, but also a damp, hay-like, barnyard-type funk here. There’s a slightly minerally finish, with a candied lemon, almost Sweet-tarts like candy sweetness on the back end.
This is lighter bodied, with a very manageable and soft level of acidity.
This was a real treat and pleasure to finally try.

Nose funky funk, tart citrus, zest, big juicy sour, barnyard funk and acidic bacteria, Brett like horse blanket funk, candied orange
Taste big funk again, soft wheat like base with some farmhouse barnyard Brett like funk, not super sour though, fair tart and acidic bacteria souring, bright citrus, rind, candied orange, smooth blending of funk and citrus juice, tart finish but not flemmy
Mouth is med to lighter bod, quite tart fair acidity, med to lower carb
