Flora is the wine barrel-aged version of Florence (1915-1967), Edward’s sister as well as the name of our Farmstead® wheat ale. In honor of Florence, this grand cru special release of Flora was selected and then packaged from a single wine barrel of Florence—a barrel that conditioned optimally for nearly two years. Brewed in the Autumn of 2015, this beer has been further conditioning in the bottle since the beginning of April 2017. Extended bottle conditioning is a hallmark of our production—such signature process refinements are integral in assisting each beer to achieve to its highest potential. This has become the standard that consistently redefines our focus and guides the progressive vision for Hill Farmstead.

Mostly clear yellow, with a slightly darker gradient to it, under a short but level bubbly white head.
A distilled expression of farmhouse, very fine carbonation delivers a deft configuration of faintly funky, horsey nutty oak that turns to mild tartness. Bright and refreshing suggestions of apricot and nectarine accented by lime characteristics come to a beautifully powder dry finish. At times I get soft prosecco notes while my partner notices hints of pinot grigio.

Pours an initial crystal-clear sunflower-gold, a fog darkening the hue as the dregs disperse; a lush, fluffy finger and a half of white foam forms over the surface, and with decent head retention, leaving a spotty, paper-thin cap, frothy, moderate collar, and a sporadic array of webby lacing spread around the walls of the glass.
Aroma suggests macerated white grape embraced by waves of focused, acidic funk surpassing lemon citrus and peaking at waxy peach; white wheat and a distant oatmeal cookie dough inform the middle, while dry grass accented with mineral-crusted wax screams rustic purity as ripe grassy cheese rind offers a glistening acidity to the final impressions.
Taste brings initial sensations of lemon zest and earthy vanilla pod cut by encroaching dandelion; flaked white wheat encounters a tinge of oak over the mid-palate, briefly waxy though bright and ephemeral in a cool, pseudo-acidic florality; mineralic undertones come to the forefront on the back end, eventually showing macerated white grape integrated into the profile's finish.
Mouthfeel shows a medium-light body sporting a taut, rounded acidity through a fluffy, weightless carbonation easing into the palate; waxy lemon rind-tartness is glistening over the mid-palate, a steady, lacto-funk twang cleanly easing into the finish; completely effortless, complexity absorbed and focused throughout.
