The thirty-fourth entry in our blended barrel-aged Farmstead® ale collection spans four years and five different threads—including wine barrel-aged Anna from 2016 and Florence from 2018. This presentation has undertaken an unhurried journey from brew day to assembly to glass, including more than three years of conditioning in the bottle prior to release. We can now present to you another blended experience of time, place, and patience.

Reached a Milestone with this beer! This is my 90th unique Hill Farmstead beer. I hope to reach 100 eventually.
750ml bottle with Silver pressure cap poured into Hill Farmstead branded black logo Durobar Charente glass.
Label states: "bottle conditioning since May 24, 2019".
Appearance: Translucent Golden bodied Saison. Bone white head that pours 1 finger tall. Head drops down to a thin ring around the glass which remains for the entire time that I am drinking this beer. No lacing at all.
Smell: Vinous white wine notes are the primary note you smell; oak, funk, citrus. You could hand this beer to me blindfolded & I would know immediately that this is a wine barrel aged Saison from Hill Farmstead. It's such a signature smell that no other barrel aged Saison smells like.
Taste: Light tartness and mellow acid in the form of citrus (mostly lemon mixed with dry lime zest) and green apples. A vinous white wine drives the flavor all the way here from start to finish. Hint of dry oak funk as well with some apple cider vinegar & cherry skin note in the finish.
Mouthfeel: medium bodied Saison with lower carbonation levels. Crisp and dry body helps to keep the heft of this barrel aged Saison lively and lighter.
Overall: Never going to complain about getting to drink anything from the CD series; had many different blends over the years. Very familiar with the CD series & this blend seems to be right there with most offerings from that series.
