Our Bière de Saison is fermented with our house mixed culture, developed over time through blending, experimentation, and reuse. It contains a combination of saison yeast, brettanomyces, and a range of wild and commercial yeasts and bacteria – some isolated from our own barrels, others grown from local fruit, and still more sourced from beers we’ve enjoyed drinking ourselves.
Once the saison yeast finishes its work, the beer conditions slowly over weeks and months, as the wild organisms start to shape it further. What begins fresh and lively becomes something deeper and more layered over time.
Malt: Maris Otter, wheat malt, oats.
Yeast: House mixed culture – including brettanomyces, lactobacillus, pediococcus, and various wild strains.

330ml brown glass bottle. 6.1% ABV.
Clear, golden colour. Bright and fresh and tart. The apricot is very understated, lending just a subtle layer of fruit to balance the funky, leathery, sour ale. Nicely refreshing on this sunny Spring evening.

This is now my 5th Saison from Kernel and they seem to have achieved consistency in the mixed ferment department, not easy... particularly when a micro is best known for strong stouts. I'm still looking for Kernel's website to approache the quality of their brews.
Apricot Looks slightly above average in a lively style. Smells are full and more than generous with the apricots. Only in the Tastes do I get the quality of the blend with the mixed and it is balanced; not too tart. Semi-dry finish. Medium-mouthed. I drank this while eating plain focaccia and it paired well.
I will continue to drink from The Kernel.

Jan. 2018: Shared 330 ml bottle. ABV is 5.1%. Cloudy apricot colour, small white head. Nice apricot aroma, also some spicy saison yeast. Medium sour and refreshing flavour, notes of sour dried apricots and lactic acid.

Had on tap. Murky golden pour with a pinky finger of white foam. Smell and taste are clones: big apricot with bright oak, mild but constant barrel funk, with accenting flowers, lemon and clementine. Feel has light sour and funky nature, artfully delicate, oak shapes well, but is not the most defined. Not sure why there is hate on this one, enjoyed quite a bit!
