Our Bière de Saison is fermented with our house mixed culture of yeast, wild yeast and bacteria, and develops into a dry, effervescent and tart beer after a bit of time. We then either age it in old wine barrels/puncheons/foudres for 8-9 months and often dry hop it, or we use this beer as a base for refermentation with fruit, as the seasons permit.

I'm liking The Kernel's persistence and consistency of saisons. This variation of their base blend uses wine barrels well.
Vic Looks average in a lively style. (I know, the Brett/Wild reduces foam.) Smells are as much wine barrel as the barley and mixed malt bill getting sweet. But the Wildness keeps any sweet in check and I get mostly a balanced tart. The dry hopping with Vic Secret certainly has a role in a semi-dry middle. But by the finish, I get mostly tart. Almost medium-mouthed among this tart subset of saisons.
While I'm not going to choose to drink Vic Secret as a table ale (except maybe a snack like fries), I still give The Kernel good Overall Hugs for its innovation and persistence in expanding the London beer tradition.

L: Hazy, dark orange colour with a short-lived lumpy head that collapses to a heavy smear with spotty lacing.
S: Pickled cabbage. Heady combination of white wine vinegar and malt vinegar.
T: Extra tart and fruity. Loads of pineapple. Wine barrel aging is right up-front. White wine?
F: Mouth-puckering with a gently dry finish.
O: A very sour but (almost) approachable saison. Impressive and complex. Not a thirst-quencher. One is sufficient.
