A mixed culture saison brewed with patience, complexity, and a little wildness.

Our Bière de Saison is fermented with our house mixed culture, developed over time through blending, experimentation, and reuse. It contains a combination of saison yeast, brettanomyces, and a range of wild and commercial yeasts and bacteria – some isolated from our own barrels, others grown from local fruit, and still more sourced from beers we’ve enjoyed drinking ourselves.

Once the saison yeast finishes its work, the beer conditions slowly over weeks and months, as the wild organisms start to shape it further. What begins fresh and lively becomes something deeper and more layered over time.

330ml brown glass bottle.
L: Clear, still, yellow/brown with no head. Not a pretty beer.
S: Fruity, a little funky.
T&F: Bright, fresh, grassy, lemony, tangy and dry.
O: A refreshing, dry, yeasty saison. Quite acidic. Takes a little bit of time for it to mellow and soften. Not sure if this was because of exposure to air, change in temperature or just my taste buds eventually calming down.

After my previous Wild from Kernel, I said I was done with their mixed ferments. But when I remembered that Kernel's saisons were not so tart and passably food-friendly, I bought their Goldings. And Kernel has redeemed themselves because they stayed consistent with their not-too-tart saisons here. As you might expect, Goldings in the dry-hop produces a dry saison when many are juicier.

Goldings Looks average, more like a murky wine than an ale; it really needs some foam, even though this treatment tends to suppress foam. Smells are harvest fruity and horsey, but not pleasant like good saisons are. Tastes are balanced, not too tart and finishes nicely dry. Definitely light of medium-mouthed.

I give good Overall Hugs to Kernel because they are pioneers and keep trying.
