For the fourth batch of Nightmare on Brett (9.666% ABV), we aged our Dark base beer in a large oak foeder and later in Red wine casks for 12+ months with our mixed culture of wild yeast and bacteria.

375 bottle poured into a Goose Island Barrel Warehouse tulip. May 2015/batch 14 bottle. Sipped on while trying out Sturgill.
Appearance: Pours an inky black body with a thin ring khaki ring. No head or lacing.
Aroma: Signature NOB lactic tang up front with an acetic edge. Lots of roasted malts that bring to mind roasted coffee and chocolate. Toasted oak and tannic red wine towards the end. It all blends together well and reminds me of some kind of sweet plum/cherry chocolate dessert.
Taste: Quite a ride here… Starts up again with a big lactic sourness. Almost cheesy even but with a lemon sour twist. About a 7/10 sourness. Middle is that dark malt build which tempers some of the sourness a bit. A bit of dark sour fruit as well, cherries and plums. Finish is that tannic wine barrel but with plenty of toasted oak. The roasted dark malts really blend well with the wine barrel, and if this wasn’t a sour beer it’d still be pretty awesome.
Mf: Low carbonation with a slick body and medium feel. Lots of pucker with a sticky tannic finish.
Overall: A very unique and adventures beer that is well worth drinking. Lots of dark sour fruits, tannic red wine, a sour punch, and a dark roasted malt profile that is complemented by the toasted oak. There’s an acetic edge to NOB that combined with the sour character makes it more of a sipper though some may not mind it. Recommended.

Barreling brought out character. 20 months has mellowed extreme sourness, but still a berry tart finish. Lovely pre storm sipper. Thanks Jazonbee.Superior red wine barrelling, which gives tanins to make it interesting.

Poured much darker than expected, great carb and head. Beer immediately smelled of red wine, some roasted malts and a faint touch of vinegar. This is easily the most sour beer I've had from CS and I was not ready for it. While the acidic elements are hard to ignore, the flavors were well blended with tannins, chocolate and some barrel character, finished dry and was a pretty fun beer. I could never kill a bottle of this alone and it's a super sipper but was a lot of fun to share with sour lovers.

375ml bottle, served in a Crooked Stave stemmed glass.
Pours a medium black body that illuminates brown when held up to the light; two finger tan head with fair retention time, with a fairly resilient collar. Occasional lacing. Smells of chocolate, cocoa powder, moderate vinegar, a bit of cherries, a fair bit of oak and tannin, a little bit of vanilla. Very complex. The base Baltic porter seems to strengthen a bit as it warms, as well, contributing more chocolate and cocoa to the nose. Flavour is very similar to how it smells; more of a tart vinegar flavour comes across. Cocoa powder, chocolate. Oak, a fair bit of red vinous character and tannins add a good bit of complexity on the second half. Mild leather and dry lemon. Drinks deliciously and finishes slightly dry. Mouthfeel is medium bodied, on the lighter side befitting a Brett beer. Drinkable, very complex, nice light, clean and dry tannic finish. Overall, I loved this beer quite a bit. It's fairly similar to Side Project's Black and Wild in the complexity and flavour profile it provides.

Black as night with a tan head that leaves nice lacing.
The aroma is sweet, tannic, with notes of grape skins. There are some nice cinnamon notes in there. Some mildly off notes, but nothing too off putting.
The flavor is delicious with assertive tartness being balanced by toasty chocolate malt flavors. Sweet grape and tannins from the oak make this a delight to drink.
Medium to thick mouth feel. Light but noticeable carbonation, and dry tartness on the finish.
A really neat, different type of sour that really shows off the base beer, the bugs, and the barrel used.
