The same malt bill as NDP but we added local Ocean Township Black Locust honey to the kettle. We then aged it for six months in mead barrels we received from our friends at a NJ winery. These were originally bourbon barrels that the winery used to age a honey wine or mead in for several months. The combination of local honey, four yeast strains and a twice used barrel yields a complex beer with hints of oak, vanilla and honey and a touch of sweetness in an otherwise dry saison.

Put in as an extra. Pours pretty nice. Good carbonation. Smell is ok kind of has Belgian tripel qualities. Good amount of honey. Doesn't drink all that great. Pretty hard to get through. A lot of discordant flavors. It's not altogether offensive but just nothing I want to go back for more of. This doesn't represent a BA saison well.

A: Very little head that dissapates quickly. Opaque and very cloudy. Color reminded me of a half and half ice tea.
S: Cotton Candy, Apple, and honey.
T: The honey note from the mead is there, but not overwhelming. Also get some bready and toasty qualities.
M: Good carbonation and body.
O: This was a fantastic saison. The base beer was good, but the addition of the barrel aged mead brought this to another level. Well balanced and full of flavor.

I was really impressed with this barrel-aged Apiary variant. I did not know what to expect given that these were third-use barrels - bourbon, then mead, then Apiary. What resulted was an incredibly complex flavor profile. Well done.
