Wine barrel-aged farmhouse Saison conditioned on hibiscus and citrus zest. This beer was brewed with a simple malt bill of continental pilsner, wheat and oats and fermented with a French saison yeast. We were fortunate enough to get some freshly emptied Pinor Noir barrels from our friends Alba Vineyard where rested the beer for about 9 months. We then racked it to our stainless tanks and conditioned it on hibiscus and fresh citrus zest. We bottled it still with fresh yeast and let it condition from several months to 3.0 volumes of CO2 to create a lively, bright, and balanced beer. The nose is bright and gives way to elegant tart and floral flavors of hibiscus and citrus with a dry and slightly acidic finish.

Pours a glowing, hazy medium red color, minimal head. Nice sweet aroma, slightly funky, citrusy. Flavor is unique. Wine barrel flavor is very prominent, citrusy, nice saison base, touch of floral. Crisp and medium bodied. Overall a really fun beer, aged nicely.

Clear reflective bright red with a tall pinkish-white foam head settling to a fuzzy uneven blanket leaving thin arms of lace.

I find this actually exhibits quite a bit of maturity and a skilled hand, as mildly present woody yet bretty funk with a touch of clovey phenol is lifted and sweetened by the red grape of the barrel and the orange zest. It seems like the hibiscus adds floral bittering, but it's more grape and wine flavor than zest or hibiscus, zinfandel-like. Smell is funkier than taste, more brett forward with hay, straw and grass, as well as a touch of splintery dusty wine oak. Soft airy froth suspends the medium-light body before it finishes semi-dry.
