This batch of Dropping Fruit is 6.0% and was brewed with Pilsner and malted wheat and soured with Lactobacillus in stainless before going to the kettle. Once in the kettle we added a small amount of Czech Saaz and lactose to balance the acidity. It was fermented with our house ale yeast with a bunch of blueberries and raspberries.⠀

Pours an amazing iridescent reddish-purple, minimal head. Fairly clear and translucent. Lots of raspberry and blueberry mix with a sour aroma. Flavor is raspberry and some blueberry, malt base is very minimal, allowing the fruit to shine. There is a tanginess that I am associating with sourness in here that pervades in the finish that I don’t love. Carbonation is nice and light, crisp and refreshing. Overall a good attempt at a difficult beer, looking forward to different iterations of this.
