To create this beer, we tasted through our stock of bourbon barrel-aged barleywines from various batches and recipes and selected the ones that would best compliment the flavors of the secondary aging process. That blend was then finished in Tawny Port Puncheon for 10 months. Tawny Port is a well-known wine from Portugal aged for extended periods, often decades, in well-seasoned casks leading to a concentration of the wine's red fruit, plum and fig flavors through evaporation and microoxidation. ⠀

The combination of the oak, caramel and vanilla from the bourbon barrels and the dark fruit character from the Port puncheon creates a barleywine with great complexity and flavor.

Bottle to snifter.
Plum, fig, date, leather, caramel, raisin.
Not quite as consistent as some other Stacking Cask blends, but very good nonetheless.

Pours fairly dark, minimal head. Aroma is complex. I get caramel, dark brown sugar, strong barrel presence. Flavor is unique compared to the past versions. This one really took on the Tawny Port barrel flavor to the point that it really dominated all aspects of the beer. In a good way. Carbonation adds to a creamy texture. Overall an interesting version, glad I bought 2 so I can age one.
